Press On, Lean In

I had a crazy week this week.  The first half was me stressing at work and realizing I’m neurotic by nature, and the last part of the week was taking my son back to college and driving round trip 950+ miles in two days.  Not the best week ever, although the driving time gave me lots of time to ponder things.

I had made a conscious effort earlier this week to start concentrating on what I eat more.  I’m moving away from anything processed and cutting out refined white sugar.  I made the move several years ago and cut out a lot of white flour trading it in for whole grain so that part is easy.  I pulled out my “Kind Life” book again and started looking at recipes.   (more…)

Learning To Love It

As has been a pattern, I haven’t run for two weeks since my last race.  I attribute this to pure laziness, as well as the fact that Cleveland weather has been in the 90s with high humidity every single day this summer.  After working all day, the last thing I want to do is come home, don my running clothes and hit the pavement in 94 degree weather.   (more…)

  • Easy Crustless Quiche

    This is a fantastic recipe that is easily adapted to whatever you really love in your quiche.

    7 egg whites;
    1.5 C skim milk
    (for quiche shown)
    Add 1 C chopped vidalia onion (sauteed in oil first)
    1 chopped red pepper (sauteed with onion)
    1 10 oz. box of spinach (also sauteed)

    Heat oven to 450 and bake for 15 minutes; reduce heat to 375 for an additional 30 minutes. During the last 15 mins. add approximately 2 C of sharp cheddar cheese.

    This will yield approximately 6 large pieces, amounting to around 110 calories per piece.
