Why Do I Love Food?

I’ve struggled as of late.  This is probably when I really SHOULD post and get it out all out on paper, right?

As I mentioned a month ago, I started a new job, which I love.  It’s a great place to work and everyone is really nice and my stress level is a lot lower than it was.  However, in saying that, it’s also a place that provides its employees with lots of luncheons and all sorts of food rewards – arrgh!  We had a “sundae bar” on Friday.  I’m not kidding – frozen ice cream with all sorts of toppings and a little get together.  I wish I could say I was strong enough to pass it up, but I was not.  It had been a stressful day and while I realized I did not need the ice cream, I really wanted it.  I SHOULD eat like my cube-mate, who went and got her ice cream (and the more healthy strawberry topping), took about 10 bites and threw it out.  Of course, I finished mine.   (more…)

  • Easy Crustless Quiche

    This is a fantastic recipe that is easily adapted to whatever you really love in your quiche.

    7 egg whites;
    1.5 C skim milk
    (for quiche shown)
    Add 1 C chopped vidalia onion (sauteed in oil first)
    1 chopped red pepper (sauteed with onion)
    1 10 oz. box of spinach (also sauteed)

    Heat oven to 450 and bake for 15 minutes; reduce heat to 375 for an additional 30 minutes. During the last 15 mins. add approximately 2 C of sharp cheddar cheese.

    This will yield approximately 6 large pieces, amounting to around 110 calories per piece.
